Lunch today! :) sorry I have been absent. I have been traveling, working and looking for a new apartment. Luckily yesterday I finally found a new place to live and I will be moving in first week of March. Today I am in Chiapas where I plan to stay until Sunday and next week I am traveling to Nuevo León again for work and visit some new friends I made in Sinaloa last weekend. It's been a good time lately, everything feels calmer, but I hadn't had time to post anything. I haven't diet and I am not planning to, but I have controlled my weight wonderfully, simply anxiety seems to be gone for a while and that has allowed me to travel and eat outside without gaining any weight. By the way, in 2 weeks my cousin will get married and I gotta find a new dress. Not worried too much about that, since I have the same size I was on September. But I definitely gonna eat more greens and drink water to feel less bloated. Meanwhile I will enjoy my travel and post many pics. R E C P E: 🍤🍚 Just a yummy takeaway-style Chinese shrimp fried rice I made a few weeks ago. 💕 Using GF shaohsing wine and soy sauce + added eggs, savoy cabbage, carrots, onions, garlic, ginger and green peas. I used some homemade bone broth in the rice as well for extra flavour and nutrition which was delish. 👌 If you want the exact recipe, I posted it on my blog {⬆the link is in my bio⬆}. * It might seem a bit sad, but as soon as we got a car recently, one of the first things on my list was to drive to Wing Yip 🚗 lol (a HUGE Chinese supermarket in Brent Cross) and I came back with a bunch of gf things. If you live anywhere near, it’s worth checking out 🙌 (but you can also order from them online, I think). The easiest chicken tortilla soup for a quick weeknight dinner! 1lb of chicken, 3 carrots, 1/2 onion, 1/2 bell pepper, a handful of cilantro, the juice of 1 lime, 1 can chopped tomatoes, and 48oz of chicken broth, 2 tsps chili powder, 1 tsp cumin, 1 tsp oregano. Sautée the veggies, add the chicken and spices until browned. Add broth and lime juice - bring to a boil then simmer for 20 minutes or until chicken is completely cooked through. Add salt and pepper to taste. For a heartier soup - Before serving you add canned beans and corn and warm through. Ταξίδι Γεύσεων 19/02/2020 #pluschannelcy #foodnewscy Ελλιωτές και Χαλλουμωτές Δείτε αυτή τη συνταγή και όλες τις συνταγές μας εδώ: https://foodnewscy.com/ Υλικά Για τη ζύμη 500γρ αλεύρι χωριάτικο 7γρ μαγιά 2κ.σ ελαιόλαδο 1κ.γ αλάτι 1 ½ ποτήρι νερό (260μλ νερό) Για τις ελλιωτές 100γρ ελιές μαύρες 1 κρεμμύδι ψιλοκομμένο Φρέσκο δυόσμο ψιλοκομμένο Λίγη κανέλα Πιπέρι Για τις Χαλλουμωτές 150γρ χαλούμι κομμένο σε μικρά κομμάτια 1/3 δέσμης φρέσκο δυόσμο ψιλοκομμένο Μέθοδος Για το ζυμάρι: Βάζουμε σε ένα μπολ το αλεύρι, τη μαγιά, το ελαιόλαδο και το αλάτι και το ανακατεύουμε καλά. Ζυμώνουμε τη ζύμη μέχρι να γίνει μια μαλακή ζύμη. Χωρίζουμε τη ζύμη στα δύο. Για τις Ελλιωτές: Παίρνουμε τη μισή ζύμη από το ζυμάρι που φτιάξαμε προηγουμένως και προσθέτουμε μέσα το κρεμμύδι, το δυόσμο, τις ελιές, την κανέλα και το πιπέρι και τα πιέζουμε στην ζύμη μέχρι να γίνει ένα ωραίο ζυμάρι με ελιές. Πλάθουμε στο σχήμα που θέλουμε και αφήνουμε τις ελλιωτές να ξεκουραστούν για 40 λεπτά πριν τις ψήσουμε μέσα στο φούρνο. Ψήνουμε σε προθερμασμένο φούρνο στους 180 βαθμούς για 40 λεπτά. Για τις Χαλλουμωτές: Παίρνουμε την άλλη μισή ζύμη από το ζυμάρι που φτιάξαμε προηγουμένως και βάζουμε μέσα το χαλούμι και το φρέσκο δυόσμο και ζυμώνουμε μέχρι να γίνει ένα ωραίο ζυμάρι με χαλούμι. This COCONUT DIJON SALMON comes together so quick and it’s delicious 🥥🐟——————————————————Ingredients: 2-4 pieces of Atlantic salmon (I used skinless but you could use skin) 1 can reduced fat coconut milk 1/4 cup Dijon mustard 1/2 cup chicken broth 1.5 tsp thyme 1 6oz bag of baby spinach Salt and pepper to taste How to: 1. Season salmon on both sides with a sprinkle of salt and pepper. 2. Heat a pan on medium heat with 1 tbsp olive oil. Sear salmon on both sides for 3-4 minutes. *If you’re using salmon with skin, sear the non skin side first* 3. Remove salmon from pan. In the same pan, add the coconut milk, Dijon, chicken broth, thyme, salt and pepper. 4. Bring to a boil then add in spinach. Wilt. Place salmon back in the pan and simmer for 5 minutes. 5. Serve with rice or pasta!

Pink sauce pasta INGREDIENTS 1) pasta of your choice 2)2-3 tomatoes 3)1 large onion 4)3-4 garlic cloves 5) cheddar or mozzarella cheese(opt) 6) milk 7) italian seasoning, black pepper and salt 8) white flour(maida) 9) butter 10) veggies of your choice Recipe 1)boil the pasta till al dente(3/4 pasta immersed in water for 20-25 mins till soft and chewy) and then strain in cold running water and mix some olive oil so it doesn't stick 2) now wash and cut the onion, tomato and garlic finely(also dice the veggies if you're using) 3) on a high flame heat some olive oil, add garlic, cook for 30 secs,add onion and cook 1-2 mins until translucent(don't brown them) and then the tomatoes and immediately add a pinch of salt and cook for another 3-4 mins(add veggies too if using and cook for 1-2 mins but don't overcook to maintain the crunch) 4) now add the pasta, mix and keep aside 5) for white sauce, take 2tbsp butter n 2tbsp white flour and cook on low flame whisking continuously,slowly start adding milk in3-4 batches n don't let any lumps form(it's okay of there are some won't matter alot) 6) once silky following consistency is achieved add some cheese(opt)and on a flame mix with pasta,put the salt,pepper n italian seasoning adjusting according to taste 7)take off the flame(add some olives n mix if you want to) and serve

Hara bhara kebab recipe INGREDIENTS:- 1) 1 cup peas 2)handful of fenugreek leaves 3)1 green capsicum 4)handful of coriander leaves & mint leaves 5) mashed potatoes 6)salt to taste 7)jeera/cumin seeds(1tsp) 8) ginger(1 inch/grated) 9)water(as needed) 10)spinach leaves (400g/20-25 leaves) 11)oil 12)green chillies (opt) Recipe 1) wash all vegetables thoroughly 2) put fenugreek(methi), coriander(dhaniya), and mint(pudina) leaves in water in a bowl(katori) and wash thoroughly with fingers and let it rest for 10-15 mins 3) chop capsicum into cubes & boil the spinach leaves for 10 minutes and wash under running water til water comes clean, keep aside 4) in a pan heart 1.5 tbsp oil and add jeera/cumin seeds,when it starts to sizzle, add ginger and green chillies, saute for 1-2 mins and add capsicum 5) sauté for another 1-2 mins and add peas, spinach, mint(pudina) and coriander(dhaniya) leaves,cook for 4-5 mins and add 1/2tsp turmeric(haldi) powder and salt(a little less than reqd for optimum taste) 6) take it off the flame, cool it down and blend it to a smooth paste. Add water spoon by spoon if needed but do not add much as it may burst open while frying. It will take some time to form a smooth paste 7) wash, boil, peel and mash or grate potatoes and add paste to it 8)add 2tbspn corn starch and 3 tbsp gram flour(besan) to it and make a nice dough to which you can give your favourite shape(you can even add bread crumbs). Now check the taste and add spices according to desired level of salt and pepper 9) to make bread crumbs, take 2-3 slices of bread and blend it to a course powder/as an alternative to bread you can use rusk 10) now take the dough and give it your favourite shape(round or flat) Now there are 2ways to cook it First is deep frying 1) coat with bread crumbs 2)on high heat, you can now deep fry, shallow fry, pran fry and serve Second way is bake or air fry 1) brush oil on each side of each kebab and pre heat aur fryer/over at 180℃ and bake/air fry for 15-20 mind and at 200℃for 5 mins for crispiness, tossing twice after 10 mind each and serve with green chutney

Lasagne recipe INGREDIENTS 1. Italian red Sauce 2. White sauce 3. Mix of cheddar and mozzarella cheese 4. Veggies(onions, tomatoes, beans, black olives, boiled corn kernels) 5. Bread slices Recipe 1. Cut all the edges of bread slices and flatten it using a rolling pin(make bread as thin as possible) 2. Saute the veggies and season with salt and black pepper 3. Grease baking tray with olive oil 4. Spread red Sauce 5.arrange slices of flatten bread over it,spread white sauce,then red Sauce,then sprinkle cheese and veggies and your layer 1 is ready 6.similarly prepare layer 2 and layer 3(be careful with amount of cheese you pour as it can get overly cheesy with white sauce) 7. Cover with foil paper and bake at 210°c for 20 mins and afterwords with without foil at 270℃for 10-15 mins till cheese is absorbed abit 8. Cut into pieces and serve
