As I was making dinner tonight I though I’d post my Pico~de~Gallo.
I make it just like my Mama made it in her kitchen.…this was just an every day food on the counter as dinner was being made. Something to hold back hungry people.
She never measured nor used written recipes from what I can recall. I on the other hand love collecting cookbooks and recipes.
I remember a cool California afternoon in her kitchen I sitting and watching her as she made her salsa as I penned the measurements. Her skill was chopping the vegetables to perfection, one I’ve never conquered, but definitely his is a taste that brings me back to Mammas house and it’s a keeper in my house as well.
Mix these ingredients together in a bowl
5-6 Roma tomatoes, chopped
1 batch green onion, chopped
½ Cup fresh cilantro, chopped
5 Serrano or Jalapeño chiles, seeded and minced
(Use less if your not in for the heat)
1 Clove garlic, minced
2 Tbsp. freshly squeezed lime juice
1/4 Tsp. Dried oregano
1 Tsp Salt and
1/2 fresh crushed black pepper
